For James Nicklin, a love of food became the foundation of an extraordinary career. Arriving at Hull College with a passion for cooking and a desire to learn his craft, he completed NVQ Levels 1, 2 and 3 in Catering and Hospitality over three years at the college between 2008-2011 – qualifications that helped shape his journey into the world of fine dining.
Sixteen years later, James is now Head Chef at the renowned Winteringham Fields in Lincolnshire, the county’s only Michelin-starred restaurant. Leading its kitchens for the past six years, he plays a key role in delivering an exceptional dining experience that has earned the venue national acclaim, five-star accommodation status and four AA Rosettes.

His career to date includes impressive roles at celebrated establishments such as The Devonshire Arms Hotel & Spa, The Star Inn, Beverley Tickton Grange Country Hotel, and The Dog and Duck Inn. Each step, he says, was made possible by the strong foundation he built at Hull College.
James credits his time at college with giving him the skills, confidence and mindset needed to thrive in the industry. But it was the tutors, he says, who truly shaped his journey

When I visited Hull College and saw the facilities and the learning opportunities, it ticked all the boxes. The chance to work in Bilocca – as it’s now known – while studying was a huge draw. I’d never worked in a restaurant before, so being able to gain real experience alongside my course made such a difference. The support the tutors give you is unreal. The help, guidance and advice I received is something I’ll always be grateful for.
